蒜頭豆豉炒蜆

材料
蔥2 棵 [切小段]
蒜頭2 湯匙 [剁碎]
生薑1 湯匙 [剁碎]
豆豉 1湯匙
蜆1斤 [連殼, 瀝乾]
台灣九層塔 1 把 (I didn’t use that, but I bet it makes it better)

調味料
舊庄特級蠔油 1 湯匙 (depends, but really, don’t put too much)
廚酒 1 湯匙

程序
1) soak the clams in water
2) drain them, then pour boiling water over them for a sec or so, drain them after ( to get rid of the sands)
3) 用油爆香豆豉,蒜 , 薑末, 放入蜆翻炒,(I actually fry along with the oyster sauce here… But recipe says fry the garlic, marinated soy beans, n ginger here with the clams here first n add the sauce later…. I think we could try that way next time) 加蓋中火煮約1分鐘,開蓋加入調味料,再用大火炒至蜆殼全部打開,尾段加蔥炒,熄火前加入九層塔炒勻。
