蒸水蛋

For two people portions:

Ingredients:
eggs x 2
Water (1:1 or 1:1.1 vs the eggs)
1 small 瑤柱
2 蝦乾

Wash the dried scallop and shrimps. Soaked them in hot water until they are soften. Separated the dried scallop into slices and chopped the shrimps.

whisked the eggs, then add the same amount of water into the egg mixture. I used the scallop and shrimps water as part of the water. Pour the mixture into a dish n add those scallops and shrimps.

At this point u can add 皮蛋or 咸蛋or both of them too.

Wrap the dish nicely with plastic wrap or foil so the egg surface will be smooth.

Steam the eggs for 8 to 9 mins.
