holladaise sauce for two

1 tbspoon lemon juice (can reduce a bit)

2 tbspoon melted butter

2 egg Yorks

dash of cayenne pepper n salts

melted butter, 

whisk egg York n lemon juice, slowly add butter while whisking to prevent egg York from cooking
poached egg

bring a pot of water to boil, add 3 tablespoons of vinegar . whirl the water, add the egg. leave it there for 2-3 mins (3 mins is almost too cooked), scope the egg out
