Cajun tilapia in tomato broth

This recipe serves 4.  I made one with this revised portion:

Almost half onion,

Little bit of red pepper

One freshly crushed tomato

Ard 3 gloves garlic

1 tilapia

Not sure how much cajun seasoning. I kept sprinkled till enough

I added mushroom and white wine as well.

Original recipe

1 and 1/2 tbs olive oil

1 medium white onion, finely diced (yielding about 1 cup)

1 green bell pepper, seeded and finely diced (yielding about 1 cup)

4 cloves garlic, minced

2 (14.5oz) cans diced tomatoes

1 tbs cajun seasoning

3/4 tsp red pepper flakes

6-8 tilapia filets

Heat oil in a saute pan on medium heat. Add onion and pepper and cook until the vegetables are beginning to soften, about 5 minutes. Add garlic to the pan and continue to cook until all vegetables have completely softened, about 2 more minutes.

Add diced tomatoes, with juice, and spices to the pan. Simmer until sauce is heated throughout.

Reduce heat to medium-low and add fish to the saucepan. Cover pan and let cook until the fish flakes easily with a fork, about 10 minutes.

Serve warm with pasta or rice.
