chicken basque

4 servings 


chicken legs or thigh x 8 

red / green pepper x 3, sliced

onion x 1

crushed tomato x 1 large can 

tomato paste x 1 small can 

white wine x 1/2 cup

chicken bouillon cube x 1

thyme x 1-2 sprigs 

bay leaves x 2-3

Rosemary x 1 sprigs

garlic x 4-6 gloves, chopped 

parsley x 1 sprigs 


1) Chop onion, garlic. slice peppers, 

2) sauté onion and garlic on medium heat till they are soften, don’t brown them. set aside

3) brown the chicken. add white wine

4) add peppers, onions, garlic and crushed tomato and tomato paste. dissolve chicken bouillon cube in water, add them with thyme, rosemary and bay leaves 

5) cover and simmer on low heat for 35-40 mins. seasons with salt and peppers. 

6) sprinkle with chopped parsley.
