Mushroom and pea pasta

Ingredients

  • mushroom x 2/3lbs, sliced
  • soy sauce x 1 tbsp
  • dark soy sauce x 1 tbsp
  • red wine vinegar x 1 tspn
  • smoked paprika and paprika
  • onion x 1/2, chopped
  • garlic x 4-5 gloves, chopped
  • avocado x 1
  • milk x 2 tablespoons
  • parmesan cheese x 2 tablespoons
  • green peas
  • salt and pepper
  • whole wheat pasta

Preparation

  1. Slice mushroom.
  2. Prepare soy sauce mixture, mushroom doesn’t soak up liquid so cut down your normal portion for meat marinate by about 2/3 and that way you can cut down waste. Mix soy sauce, dark soy sauce, red wine vinegar, paprika, smoke paprika and black pepper. I was not sure which paprika works better so I used both, just make sure you get the smoky meat flavor then you will be fine.
  3. Marinate mushroom in the soy sauce mixture.
  4. Chop onion and garlic.
  5. Scope the avocado meat out and food process it with milk and parmesan cheese.
  6. Cook pasta following package instruction.
  7. Stir fry your onion and garlic on high heat with olive oil. Add mushrooms and then down heat to medium heat. After about 1-2 minutes, add frozen green peas. When it is almost done, add avocado mixture.
  8. Mix sauce with pasta.
