Zucchini and shrimp cakes


shrimp cake :

  • shrimp x 6 oz, blended (shrimp to zucchini about 1:1)
  • zucchini x 1.5 – 2, grates
  • bread crumbs panko x 0.5 cup
  • egg x 1
  • salt and pepper
  • Italian herbs

Peas relish

  • Green peas x 1 cup, blended
  • Sweet Onion x 1/4 cup or less, chopped
  • Olive oil x 1 tbsp
  • Red wine vinegar x 1 tsp
  • salt and pepper


  1. Chop or blend green peas.
  2. Chop onion.
  3. Mix them together with olive oil, red wine vinegar, salt and pepper and let it sit for 10 mins and set aside.
  4. Grate zucchini with skin onto paper towel. Squeeze excess liquid as much as possible.
  5. Mix zucchini, shrimps, egg, panko, salt and pepper together.
  6. Heat and grease sauce pan, form shrimp mixture as shrimp cake and cook on low heat.
  7. Serve shrimp cake with relish.
