Ingredients
shrimp cake :
- shrimp x 6 oz, blended (shrimp to zucchini about 1:1)
- zucchini x 1.5 – 2, grates
- bread crumbs panko x 0.5 cup
- egg x 1
- salt and pepper
- Italian herbs
Peas relish
- Green peas x 1 cup, blended
- Sweet Onion x 1/4 cup or less, chopped
- Olive oil x 1 tbsp
- Red wine vinegar x 1 tsp
- salt and pepper
Preparation
- Chop or blend green peas.
- Chop onion.
- Mix them together with olive oil, red wine vinegar, salt and pepper and let it sit for 10 mins and set aside.
- Grate zucchini with skin onto paper towel. Squeeze excess liquid as much as possible.
- Mix zucchini, shrimps, egg, panko, salt and pepper together.
- Heat and grease sauce pan, form shrimp mixture as shrimp cake and cook on low heat.
- Serve shrimp cake with relish.
